Happy New Year!

Hope you and your family have had a wonderful 2012 and are excited about the possibilities that await you in 2013. What kind of New Year's resolutions have you made for this year...or do you even do a resolution every year?

We have decided to do one this year, but only are commited  for 2 months. After that, we will have to see what the results are. As I have mentioned in previous posts, my husband has been experiencing some random, unusual stomach pain for many years, and he has finally agreed to let me try different diets on him, hoping that it will relieve some of the pain he has been experiencing. So starting today, our family is going Vegan for the next several months.

At first, there was a lot of apprehension, mostly on my husband's part, because he really enjoyed his "meat and potato" diet. But he's sick of being in pain, and if this diet will help him in any way, he's willing to try it. We already tried a gluten-free diet last year for a couple months, but unfortunately it didn't help his pain. Going vegan eliminates any animal products, including dairy and eggs that many people have allergies too, so we are hoping for some relief.

I wanted our New Year's Eve meal to be a special one, so I asked him what was one meal that he would like to end the year with...of course he answered "Steak!"

So, I went to our local butcher, bought two large rib-eye steaks that we seasoned with salt, and cooked them in butter in our cast-iron pan. We served it with garlic-mashed potatoes (will be posting recipe soon) and grilled corn.  Here's my husband having a glass (that is from our hometown in Germany) of beer with his meal. The whole meal was delicious, but we are excited what these next couple months hold for us. Have you ever had to try a new diet due to health reasons? If so, what was it? Would love to hear your story.

Enjoy!
